Ingredients

Olive oil
1  
Onion (finely diced)
1  
Red Bell Pepper (finely diced)
1 clv
Garlic (minced)
2 T
Tomato paste
1⁄2 t
Basil, dried
5 c
Water (or vegetable stock)
2 cn
White Beans (drained well)
2 c
Spinach (chopped)
   
Himalayan salt (to taste)
   
Black pepper (to taste)

Instructions

Heat the oil over medium heat, add onion, red pepper and garlic, sautee for three minutes. Mix in tomato paste and basil or oregano. Add vegetable stock and beans and simmer for 10 minutes. Stir in spinach, cooking for one to two minutes until just wilted. Season with salt and pepper
