Black Bean Burgers

Black beans (drained and rinsed)
1⁄3 c
Oats, rolled
1 t
Garlic powder
1 T
2 T
1 t
Onion powder
1⁄2 c
Kale (raw, shredded)
3⁄4 c
Mushrooms (stemmed and diced)
Black pepper


Preheat oven to 400 degrees. Drain the black beans, set liquid aside (just in case). In mixing bowl, mash black beans until soft, but not completely mashed. Stir in remaining condiments and spices then add the oats. Roll the burger meat into balls and then flatten between your palms. You want the patties to get crispy, but not fall apart, so you're aiming for 1" thickness. Brush or spray a light coating of oil on burgers (optional). Place on parchment paper or on lightly oiled baking sheet. Bake 12 minutes. Flip over and bake another 12 minutes. Serve atop salad or on a burger bun with some Vegenaise,lettuce and a ripe tomato slice.


NOTES : Feel free to leave out the kale and mushrooms or to add in any other delights or spices. Once you've got the basic recipe, play with it! Make a bunch to freeze, then just pop them in the oven when you need a fast meal.
